Green Mayonnaise

  • 2 large avocados, pitted and cubed
  • 1 tbsp olive oil
  • 2 tsp lemon juice
  • 1/2 c. fresh basil leaves
  • 1 garlic clove
  • salt & pepper to taste

Blend all ingredients together in a Vitamix or other blender. It does not store well so eat while it’s fresh.
