Ginger Maple Sweet Potato Puree

  • 3 medium sweet potatoes (2 lbs), peeled & diced into 2-inch cubes
  • 3 Tbsp butter
  • 3 Tbsp pure maple syrup
  • 3 Tbsp freshly squeezed orange juice
  • 1 Tbsp fresh ginger, peeled & grated
  • salt & pepper, to taste

Boil the potatoes until tender. Mash or puree the potatoes with a mixer, Vitamix, or food processor. Add remaining ingredients. Mix a little bit more. Season with salt & pepper. Could drizzle with extra virgin olive oil and fresh herbs to complete it.
