- 1 lb. Red-skinned potatoes
- Extra Virgin Olive oil
- 2 cloves fresh garlic, chopped
- Salt
- Pepper
Fill a 13 x 9 casserole dish with cubed potatoes (skin on). Toss with all other ingredients – not too much oil.
Cook at 425 degrees for 20 mins. Turn once halfway through. Cook until browned slightly.
