- 1 small head of cauliflower, cored and roughly chopped
- 2 Tbsp coconut oil
- 1/2 yellow onion, finely chopped
- 4 cloves of garlic, minced
- 1 carrot, finely chopped
- 1 zucchini, finely chopped
- 1 c. mushrooms, finely chopped
- 1/4 tsp sea salt
- 1/2 tsp powdered ginger
- 1/2 tsp turmeric
- 1 Tbsp coconut aminos
- 1 Tbsp green onion, chopped
Process the cauliflower in a food processor or Vitamix by pulsing until it resembles rice. Set aside. Heat the coconut oil over medium-high heat. When the oil has melted and the pan is hot, add the onion & cook for 5 minutes, stirring. Add the garlic & cook for another 5 minutes, stirring. Add all other ingredients except green onion. Cook 5-10 minutes more, stirring, until the vegetables are soft. Garnish with green onion.
