Rice Pilaf

  • 1 Tbsp olive oil
  • 1/2 small yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 c. long grain brown rice
  • 2-1/2 c. chicken broth
  • salt & pepper, to taste

In a medium saucepan, heat oil over medium heat. Add onion & garlic, cooking and stirring until golden- about 5 minutes. Add rice and sauté for about 1 minute. Add broth. Season with salt and pepper to taste. Bring to a boil. Cover and simmer on low until rice is tender and most of liquid is absorbed (about 45 minutes). Add water or broth if needed to make rice tender.
