Jalapeno Dijon Grilled Chicken

  • 3 lbs chicken thighs
  • 4 jalapenos, diced, seeds optional
  • 2 garlic cloves, minced
  • 2 Tbsp olive oil
  • 4 Tbsp dijon mustard
  • 2 Tbsp raw honey
  • 2 tsp salt
  • 1 Tbsp fresh rosemary, chopped
  • 1 tsp black pepper
  • 1 lemon

Combine all ingredients except the lemon in a bowl to marinate the chicken. Marinate in the refrigerator for 4-24 hours, the longer, the better. Grill chicken. Place hot chicken in a glass container. Cover with lemon juice. Put a lid on it to let the chicken steam with the juice for about 10-15 minutes.
